Vegetable Pot Pie Soup

I love a delicious, hearty soup that is total comfort food which is why I decided to make a vegan Vegetable Pot Pie Soup!

 

This plant-based soup recipe is complete with carrots, onions, celery, potatoes, corn and peas with a hint of thyme and rosemary. Checkout the recipe below…

 

 

Ingredients (4 servings)

  • 6 large carrots (sliced)
  • 4 stalks celery (diced)
  • 1 yellow onion (diced)
  • 1 clove garlic (minced)
  • 2 cups water
  • 2 tsp. chicken base (vegan)
  • 3 tbsp. butter (vegan)
  • 1/4 cup whole wheat flour
  • 2 1/2 cups oat milk (plain, full fat; or another plant-milk of choice)
  • 6 Yukon gold potatoes
  • 1 1/2 tsp. black pepper
  • 1 1/2 tsp. thyme
  • 1 pinch nutmeg
  • 1/2 tsp. rosemary
  • 2 bay leaves
  • 1 10 oz. bag frozen corn
  • 1 10 oz. bag frozen peas

Directions

  1. In a large pot over medium heat, sauté the carrots, celery, onion and garlic. Cook until onions are translucent.*
  2. Meanwhile, cube the potatoes and set aside. Then microwave the water in a microwave safe dish for 2 to 3 minutes (or heat over the stove). When the water is hot, stir in the vegan chicken base until it dissolves to make chicken broth. Set aside.
  3. When the onions are translucent, add the butter to the pot to melt. Then stir in the flour to coat the veggies.
  4. Add the chicken broth, milk and potatoes to the pot and bring to a boil. Stir in the pepper, thyme, nutmeg, rosemary and bay leaves. Cook for 10 minutes.
  5. Reduce to a simmer and stir in the frozen peas and corn. Continue to cook for 3-5 minutes until the veggies warm then remove from stove.
  6. Add more seasonings to taste. Remove the bay leaves to serve. Enjoy!

*Add a few dashes of vegetable broth or water to sauté the veggies.
