Ingredients (4 servings)
- 2 Tbsp. olive oil
- 1 large sweet potato (cubed)
- 1 red onion (chopped)
- 3/4 cup dry quinoa
- 1.5 cups hot water
- 1.5 tsp. vegan chicken base (or swap the base and water for 1.5 cups chicken broth for non-vegan recipe)
- 10-14 oz. bag frozen edamame (shelled)
- 1 avocado (optional)
- Fresh cilantro
- Sesame seeds (optional)
- Sea salt & pepper
Asian Peanut Sauce
- 1 Tbsp. sesame oil
- 2 cloves garlic (minced)
- 4 tsp. fresh ginger (minced)
- 1 Tbsp. soy sauce or Tamari (a gluten free option)
- 1.5 tsp. honey or maple syrup
- 1 Tbsp. creamy peanut butter
- 3/4 lime (juiced)
Directions
- Pre-heat the oven to 425°F.
- Line a baking sheet with aluminum foil for easy clean-up (optional). Add the sweet potato and red onion to the pan. Drizzle with olive oil and sprinkle with sea salt and pepper. Bake for 20-25 minutes until tender.
- Prepare the quinoa: Add the water and quinoa to a medium pot and bring to a boil. Once boiling, stir in the chicken base until it dissolves. Reduce to a simmer, then cover and cook for about 12-15 minutes until the quinoa is tender and all water is gone.
- Meanwhile, cook the edamame in the microwave or on the stovetop according to its package directions. Set aside.
- Prepare the Asian Peanut Sauce: In a small pan over medium-low heat, add the sesame oil, garlic and ginger. Cook for 1-2 minutes until fragrant. Whisk in the remaining sauce ingredients and cook for 1 minute until it’s warmed and has a consistency you like. Set aside.
- Prepare the Superfoods Salad: Equally separate the quinoa into 4 bowls. Top the quinoa with equal amounts of roasted veggies and edamame. Then drizzle each salad with the Asian Peanut Sauce. Add slices of avocado to taste. Garnish with fresh cilantro and sesame seeds to serve. Enjoy!
