One meal from the plan I find myself gravitating towards these days as I navigate motherhood is this Maple Almond Overnight Oats recipe!

 

I rely on this 3-minute easy vegan breakfast because I just don’t have the time right now to cook elaborate morning meals – heck, I’m lucky if I can toast bread without burning it to a crisp.

 

That’s why these Maple Almond Overnight Oats are the perfect grab-and-go option when I need a quick bite before feeding my baby girl.

 

If you have busy mornings like me, then you don’t want to miss out on this delicious and nutritious recipe below…

 

Ingredients (makes 1 serving)

  • 3/4 cup oats (use gluten free oats if needed)
  • 3/4-1 cup unsweetened vanilla almond milk
  • 1 1/2 tsp. creamy almond butter (or any nut butter of choice)
  • 2 Tbsp. 100% pure maple syrup
  • 1 1/2 tsp. chia seeds
  • 1/2 cup fresh strawberries (sliced)
  • 1/2 fresh banana (sliced)

Directions

  1. In a cereal bowl or small food container, combine the oats, milk, almond butter, syrup and seeds. Mix well and submerge the oats completely in the milk.
  2. Top the oats with the strawberry and banana slices when ready to eat.**

**The oats can be eaten directly after preparation or can be soaked overnight for a softer texture. If you choose to soak them overnight, put them in a sealed food container and top them with fresh fruit when ready to eat.
