Holiday Vegan Peppermint Bark

While cookies of all kinds usually rule the Christmas season, this vegan peppermint bark is a chocolate treat that everyone can enjoy during the holiday!

Peppermint bark is festive and my recipe is super easy to make with only 4 ingredients. Get the recipe below!

Ingredients (20 servings)

  • 1 12-13oz. container vegan white chocolate
  • 1 10 oz. bag vegan semi-sweet chocolate chunks
  • 1 tsp. pure peppermint extract
  • 10 peppermint candy canes (broken into pieces)

Directions

  1. Pour the bag of chocolate chunks into a microwave-safe bowl. Microwave the chocolate in 20-30 second increments until chocolate is completely melted. Stir the chocolate occasionally to keep it from burning.
  2. Cover a baking sheet with parchment paper. Then evenly pour the melted chocolate onto the parchment paper. Lightly bang the pan on top of a countertop to spread the chocolate more evenly. Place the pan in the freezer and allow the chocolate to harden.
  3. Rinse and dry the microwave-safe bowl used for the chocolate. Set aside. Then add the pieces of candy canes to a food processor. Chop the candy canes a few times to break them into shards. You’ll have a light dusting of peppermint at the bottom of the food processor. Set aside.
  4. Add the white chocolate coins to the microwave-safe bowl. Microwave the white chocolate in 20-30 second increments until melted. Stir the chocolate occasionally so it doesn’t burn. Once the white coins have melted, stir in the peppermint extract.
Remove the baking sheet from the freezer. Pour the melted white chocolate over the solid chocolate. Then top the white chocolate with the crushed candy canes. Freeze for about 10 minutes until the white chocolate solidifies.
  5. Remove the peppermint bark from the freezer. Then flip the bark so the white side is face down on the parchment paper. Use a sharp knife to then break the bark into pieces (aim to create 20 pieces of bark).* Enjoy!

*Do not attempt to use your hands to break the bark into pieces. The warmth of your hands will melt the chocolate.
