Ingredients (makes 4 servings)

  • 1 14oz. pack extra firm tofu
  • 6-8 Tbsp. cornstarch
  • 1/4 cup cold water
  • Sesame seeds (optional)

Marinade

  • 1/4 cup low sodium soy sauce or tamari
  • 2 tsp. sesame oil
  • 1-2 Tbsp. maple syrup
  • 1/2-1 tsp. ground ginger paste
  • 1/4-1/2 tsp. garlic powder
  • 4-5 Tbsp. brown sugar

Teriyaki Sauce

  • 1/4 cup low sodium soy sauce or tamari
  • 1/2 tsp. ground ginger paste
  • 1/4 tsp. garlic powder
  • 5 Tbsp. brown sugar
  • 2 Tbsp. maple syrup

Directions

  1. Preheat the oven to 400°F. Meanwhile, drain the liquid from the tofu package. Then wrap the block of tofu in a clean dishtowel and place a heavy object on top of it to remove any excess water. Set aside.
  2. In a large bowl, whisk together the marinade ingredients. Set aside.
  3. Unwrap the compressed tofu and cut it into small, bite-size cubes. Add the cubes to the marinade. Let them sit for about 3 minutes, gently tossing every minute.
  4. Remove the tofu cubes from the marinade and place them in a large plastic baggy. Sprinkle the tofu with 4-6 tbsp. of cornstarch to evenly coat each cube. Use more cornstarch if needed. Set aside.
  5. Cover a baking pan with parchment paper. Spread the tofu bites onto the pan and bake for 10-12 minutes. Then flip the bites and bake for another 10-12 minutes until crispy.
  6. Meanwhile, in a large saucepan over medium heat, combine the teriyaki sauce ingredients. While the sauce heats, whisk together 2 tbsp. cornstarch and cold water in a separate bowl.
  7. When the sauce comes to a simmer, whisk in the water and cornstarch mixture. The sauce will thicken as it heats. When a desired sauce consistency has been reached, remove the saucepan from the stove.
  8. At this point, the tofu bites should be just about done. When they finish baking, toss them with the teriyaki sauce and garnish with sesame seeds. Serve over an Asian salad mix, rice or pair with noodles and vegetables!
