Cranberry Walnut Salad with Homemade Feta

A light salad full of mixed greens then topped with cranberries, glazed walnuts and homemade, plant-based almond-feta cheese and a drizzle of Dijon vinaigrette is my go-to summer meal.

This Cranberry Walnut Salad is super simple to make and the healthy fats and protein of almonds and walnuts keeps me satiated for hours.

The salad itself is only 5 ingredients – cranberries, glazed walnuts, a fresh spring mix of greens, feta cheese and an Dijon vinaigrette dressing.

If you’re not vegan or plant-based, then you can buy a light feta cheese from any grocery store or you can make your own vegan feta using raw almonds, olive oil, lemon and garlic (recipe below).

Dijon mustard, oil, honey or maple syrup with a little balsamic vinegar makes-up the oil-based dressing and it takes less than a minute to whisk together.

Ingredients (4 servings)

  • 5 oz. spring mix greens
  • 1/2 cup dried cranberries
  • 1/4 cup glazed walnuts

Dijon Vinaigrette Dressing

  • 1 Tbsp. balsamic vinegar
  • 1 1/2 tsp. honey or maple syrup
  • 1/2 tsp. Dijon mustard
  • 2 Tbsp. extra virgin olive oil
  • 1/8 tsp. black pepper

Homemade Vegan Feta

  • 1/3 cup raw whole almonds
  • 1 Tbsp. + 1 tsp. lemon juice
  • 1 Tbsp. extra virgin olive oil
  • 1/2 garlic clove
  • 1/4 tsp. sea salt
  • 3 Tbsp. + 1 tsp. water

Directions

Homemade Vegan Feta

  1. Combine the feta ingredients in a food processor. Puree until the mixture is creamy. Then refrigerate for 30 minutes to thicken.

Dijon Vinaigrette Dressing

  1. Use this time to prepare the dressing. In a small mixing bowl, whisk together the ingredients of the Dijon Vinaigrette. Refrigerate to chill.
  2. Meanwhile, in a salad bowl, toss the spring mix, dried cranberries and glazed walnuts together. When ready to serve, top the salad with a few spoonfuls of feta and drizzle with vinaigrette. Enjoy!
